The 14-item butcher starter list

What we put into a shop breaking two to three carcasses a week, with a serve-over window out front and a boning room behind it. Every line swaps — tell us what is already in the shop and we requote.

Butcher equipment by stage

Before you buy

The four questions that decide a butcher's equipment list.

Get these wrong and you buy twice. Send us your floor plan and your weekly carcass volume and we'll answer all four in writing before anything is ordered.

Send a floor plan
  • Cool room or upright fridges?

Under about 300kg of carcass and boxed meat on hand, two solid-door uprights hold it and cost a third of a built room. Past that you want a 3.0 x 2.4 room on rails so sides can hang, and the uprights become your working stock.

  • Open deck or glass serve-over?

Open deck multidecks sell more because nothing sits between the customer and the meat, but they run 20–30% higher on power and need night blinds pulled every close. Glass serve-overs hold temperature better in a shop that opens onto the street.

  • Will a bandsaw and a cool room run on single phase?

Not together. A bandsaw, a #32 mincer and a cool room condensing unit will take you past single phase in most tenancies. We read your switchboard before quoting so the upgrade is a line on the quote, not a phone call in week three.

  • Can the room be hosed out?

Only if the benching is specced for it — sealed welds, no undershelf traps, legs on adjustable feet clear of the floor, and a graded floor waste. Ask for leg-braced 700 series benching rather than undershelf models anywhere you wash down daily.
