Pass Through Dishwashers

Pass-through, or hood-type, dishwashers are built for continuous wash-up in high-volume kitchens. Racks are loaded on one side, pushed under a lifting hood, and collected clean on the other, which keeps dirty and clean sides separated and lets two staff work the bay without crossing paths. A hood machine only performs as well as the bay built around it, so plan inlet and outlet Benches, a pre-rinse Spray Arm and scrapping Sinks into the layout from the start.
