Char broilers and char grills cook over spaced grill bars set above radiants, so fat drips clear of the food and flares back as smoke. Because char broilers throw a lot of radiant heat and grease-laden smoke, they set the canopy requirement for the whole hot line — plan them together with Extraction & Ventilation.
